Rest stop

This was my Sunday afternoon tea. I'm using this post to introduce two things, really: the copy of Aesthetic Magazine I got in the mail the other day, and this chocolate chip cookie-cake thing in a cup.


This is great if you've got a just-baked big-fat chocolate chip cookie craving, but don't have the time to make a whole batch (or if you're on some torturous portion control diet).
  • Melt 1 tablespoon of butter.
  • Add 1 tablespoon of granulated sugar, and 1 tablespoon of brown sugar.
  • Add 1 egg yolk
  • Add 3 drops of vanilla extract and combine.
  • And then a pinch of salt...
  • And 1/4 cup of AP flour...
  • Then a whole load of chocolate chips (depending on your preferred chocolate to cookie ratio. I like mine high).
  • Add this to a large mug or bowl, depending on how cakey you want it (I recommend a wide dish of some sort) and microwave for 60 seconds

Surprise! Look familiar? I did a feature for the magazine where I rambled on a bit about my Eurotrip (which was a while ago now, but it's been a couple of months since I wrote it).

Yes, I'm aware it is now Tuesday. I've been busy, and this post is cutting into my sleeping time - I'll regret it in the morning!

  10. I love making microwave mini-cakes! My favourite combination so far would definitely be chocolate and blueberry - so good. Chocolate orange is pretty good as well (cocoa powder, chocolate chips and orange juice)

  18. So glad you liked the magazine! I think it's a really sweet little mag, filled with wonderful stories and creativity. Michelle did us proud! You're like me, I get over a cold and then all of a sudden I get it again! I cannot win - especially in this weather. Oh and you could definitely pull off the jumper/skirt look Jane! It would look great on you!

    I NEED to try out the cookie in a cup! There's a pub an hour away that makes 'cookie dough pizza' - I think it serves about 12 people but me and my two friends are going to try and brave it soon... I've gotta do, what's I've gotta do!

  43. I need to someday order my copy of Aesthetic magazine! But i don't trust the postal office where I am now, so i'll just have to wait to be somewhere sure.

    I have been hearing about this cookie in a bug thing, but never tried to make it. I have hard time believing a microwave can bake! lol. Does it really taste as good as a regular chocolate chip cookie?
